Kombucha is a sugary tea that is ferment at room temperature.
The basic green or black tea that we are familiar with is fermented by adding a culture of bacteria and yeast – called the SCOBY.
What is a SCOBY?
Well, the kombucha culture or SCOBY is a colony of living bacteria and yeast. SCOBY stands for Symbiotic Culture of Bacteria and Yeast. The B.Y. in SCOBY, the bacteria and yeast, are microscopic, so you can’t see them. But they are there, living in both the liquid of the kombucha starter tea and the kombucha pellicle.
These microorganisms breakdown the sugars and complex carbohydrates into simpler forms.
Hence, Kombucha is we can say to be probiotic, Rich in antioxidants and overall a healthy drink with great taste.
It is yellowish to brown in colour. Depending on the kind of tea and SCOBY and has a slight sour taste and fizz too. And all this takes only brewing some sweet tea and letting nature take over!
